Sourdough Russian Rye (50% Rye)

This bread goes beautifully with cured salmon, herring, various fish spreads, as well as with pastrami, bologna, and simply buttered with a touch of honey.

Ingredients: Unbleached bread flour, rye meal, spring water,  rye sourdough culture, levain, molasses, honey, extra virgin olive oil, sea salt, caraway seeds.

German Seeded Rye (50 % Rye)

This is a very aromatic bread due to hearty amount of linseeds, sesame seeds, and sunflower seeds. The bread is also loaded with fiber.

Ingredients: Rye meal, unbleached bread flour, sourdough culture, spring water, sea salt, honey, linseeds, sesame seeds, sunflower seeds.

Sourdourgh Cinnamon-Raisin Bread

Festive variation of Cinnamon-Raisin Bread. These little batards are loaded with different fruit and nuts. These are extremely good with or without frosting. A healthy substitution for traditional  festive cakes.

Ingredients: Unbleached bread flour, rye meal, whole-wheat flour, spring water, rye sourdough culture, poo levain, honey, extra virgin olive oil, sea salt, ground cinnamon, seedless raisins (golden and red), cranberries, dried apricots, dates, macadamia nuts.

100% Sourdough Rye Bread

This type of bread is very popular everyday bread in Eastern European countries. In Germany, for example, it is called Vollkornbrot. The bread has fine flavor, excellent keeping quality, and good versatility with food. It is extremely delicious with just butter on top and a cup of good tea. It goes very well with herring or smoked salmon.

Ingredients: Rye meal, rye sourdough culture, sea salt, honey, molasses, caraway seeds and/or coriander seeds.
Sunflower seeds and/or malted rye grains could transform this bread into a distinctly new variety.
