Russian Sourdough Stuffed Rolls
This is extremely popular food in Russia. According to Wikipedia, Pirozhki (plural form of pirozhok, Russian: пирожок, пирожки), sometimes transliterated as piroshki , is a generic word for individual-sized baked or fried buns stuffed with a variety of fillings. The stress in pirozhki is properly placed on the last syllable: [pʲiroʂˈkʲi]. Pirog is usually made from yeast-raised dough, but can also be made from shortcrust or puff pastry. The name is derived from the ancient Proto-Slavic word pir, meaning "banquet" or "festivity".Pyrohy or pirogi (plural) are full-sized pies, while pirozhki are individual-sized buns that can be eaten with one hand.
The standard shape for pyrozhki is oblong with tapering ends, but rectangular or circular pyrozhk are also common. They can be closed or open-faced with no crust on top (like a tart).
I use my own sourdough-based pastry to make healthy version of this popular treat. Pirozhok could be eaten with chicken broth or some soup. One pirozhok makes a wonderful breakfast or lunch with a cup of good tea or coffee.

These are the pastries from my childhood. They are not too sweet and have all the benefits of Ricotta cheese filling. Kids could buy them for a snack in school cafeteria.

This wonderful buckwheat sourdough bread could be presented in many forms. My favorite are mini batard and demi baguette. Both varieties are very good for making sandwiches. In my family this bread became a healthy substitution for the traditional buckwheat pancakes. You have the taste of buckwheat without frying: no extra calories!

Sourdough Pumpkin and Jalapeno Bread
The bread is made with good amount of baked butternut squash puree which gives the loaf a very nice yellow color, and the distinctive pumpkin taste. It could be made in two variations: spicy and non-spicy. The spicy variation simply contains more jalapeno pappers roasted in extra virgin olive oil plus a bit of this dinamite oil! The mild variation does not have that spicy oil addition and uses less jalapeno peppers.
Potato Rosemary Bread
This is Poolish (the popular form of liquid levain) based bread. I use the fresh organic rosemary from my garden for this bread. It is very fragrant and keeps well due to long fermentation and hefty amount of potatoes used.
